Where to eat high quality oysters and mussels ?
When you visit Vietnam, one can raise the question of knowing if Vietnamese seafoods and fishes distributed to public are fit and safe for human consumption?
To answer this question, we asked a french man from Brittany, Jean Christophe Sevin who has built a Biological farm in Vạn Ninh, Khánh Hoà (1 hour from Nha Tang). His company called BVS (Biological Vietnam Seafoods) has adapted, transformed and developed over the years new technical methods to produce excellent quality oysters and green mussels. The target was to get an outstanding French quality, plus healthy products, using OPS (Organic Purification System). OPS is an invention of BVS research & development team, searching to make pure mineral water to breed baby lobsters.

What is Aquaculture?
Aquaculture is also known as fish or shellfish farming, it refers to the breeding, rearing and harvesting of plants and animals in all types of water environments including ponds, rivers, lakes, and the ocean. If Aquaculture includes the production of seafood from hatchery fish and shellfish which are grown to market size in ponds, tanks, cages, or raceways, the Marine Aquaculture refers to the culturing of species that live in the ocean such as oysters, clams, mussels, shrimps, salmon, cod, moi, yellowtail, barramundi, seabass and seabream.

How BVS can guarantee safe seafood products?
At Biological Vietnam Seafood, we introduced a traceability system, but the main point is that we control the process from A to Z, from the larvae to the oyster No1 and without any external suppliers. We also produce our phytoplankton naturaly, under controlled atmosphere, controlled temperature, to feed all our shells.

A week before selling, oysters / mussels are plunged in different treatment ponds to receive micro doses of liquid oxygen and hydrogen injected at regular and specific moments. All the shells are fully purified, naturally, and every batch is analysed to prove our quality. Since the beginning of our activity, we refused chemicals, growth hormons, medicine, antibiotics, and all not natural methods. Forecast, geographic situation of Vietnam force us to reach perfect sanitary conditions, to avoid such medical treatments.

How many kilos of oysters do you produce daily?
We produce 1 ton a day. From 2015, we became industrial and obtained the ISO Norm. A 2153 sq feet new nursery has been built, a 10,764 sq feet new hatchery, the sea concession has been extended to 12 hectares, and now 16 hectares. We also employ 35 full time staffs.

You are also a Green Caviar breeder, could you present this seaweed?
Caulerpa lentillifera resembles bunches of little shiny grapes, it's called in Japan umi-budō (海ぶどう) which means sea grapes. The edible seaweed, which looks like a mini string of green pearls, pops in the mouth like caviar, is highly nutritious and beautiful. The color of this seaweed ranges from bright green to bluish and at times olive green. Our green Caviar is produced directly in our farm, with a 100% natural breeding process. We don't use any chemicals, no fertilizer, no pesticides, no insecticides, no fongicides. Sea grapes are cultivated and harvested by hand respecting the natural cycles.

Let's talk about the Green Mussels (Perna Veridis)
In Europe and America, it's easy to find the green-lipped mussel from New Zealand, what can you tell us concerning the Asian Green Mussels?

Asian Green Mussels (Perna Veridis) and Green lipped mussels (Perna Canaliculus) are very similar. We are working with local species, the "perna veridis" because they are very well adapted to the climate, and endemic in this part of Asia. Whale Island Bay is the perfect place to breed mussels because there are no human activities, no pollution, no industry, no agriculture...! We are leaving our bivalves grow in a water of excellent quality. Daily analyzes are made by our robot at sea, to have a minute by minute monitoring of our production.
