Megavina's Investigators have visited this japanese restaurant, they ordered a selection of dishes and beverages, visited the facilities (toilets and had a look on the kitchen area if possible), they checked the cleanliness and how the staff interacted with clients. Our investigators work anonymously, the best way to get real and objective reviews because the staff and the managers don't know that we are investigating.

Original decoration, excellent food

- by - Restaurant visited and reviewed March 27, 2016

From outside the restaurant seemed small and quite standard for a japanese establishment. Inside it was much different, decoration was original, a bit weird, with silver and black shades, string curtains, not so much light but they use spotlights illuminating the middle of the tables.

The menu offered a wide selection of sushi, sashimi (such as octopus sashimi and Kobe cheese), oysters, ramen, nigiri, maki, bento boxes but also traditional dishes.

To satisfy picky appetites, we selected Gyuniku Enoki rolls, the perfect appetizer to start. Enoki mushroom contains high protein and vitamins. While cooked with beef, enoki mushroom will smooth the taste of beef while maintain an overall tender feeling. Gyuniku are marinated with japanese soy sauce and probably baked. The dish was gorgeous!

We continued with Ika Yaki (grilled squid), it's a very popular dish in Japan, especially served in Izakaya (居酒屋), a kind of casual places for after-work drinking. Squid was perfectly clean without any entrails and beak.

To finish, we chose chicken Teriyaki. If you're going to, uh, chicken out and order teriyaki instead of sushi, you should at least educate yourself on what makes that sauce so magical, so savory, so delicious. Magical enough to want chicken instead of eating sushi with everyone else, at least. Teriyaki is the Japanese term for meat that has been marinated in teriyaki sauce, then broiled or grilled over coals.

Teriyaki sauce is composed of soy sauce, sake (or mirin), sugar and ginger. Our dish was served with broccoli and cauli flower.

As drink we ordered a Sapporo beer with its light cereals aromas and citrus notes, an excellent choice with our meal. We are sorry, however, and it is the only reservation we will mention, that the beer was served in a plastic glass. We also asked for an apple juice.

The restaurant was very clean, waitresses were well-trained, nice and accommodating, and they spoke English quite well.

Ichiba Sushi has surpassed all of our expectations, for this reason, we would like to recommend it to all sushi lovers out there. We have to admit that we were highly impressed, not only with food quality but with the atmosphere of the restaurant.

Hi Megavina. Thanks for this nice review, i've been in Ichiban for lunch with 2 vietnamese colleagues, we are very happy. Food was excellent, fresh, savoury. I would like to know how to become a consultant for you. I worked 10 yo in the catering industry, my last job was F&B manager for Pride of Britain group. I am living now in Saigon district 2.
